Green Mango Pickle | କଞ୍ଚା ଆମ୍ଵ କୋରା ଆଚାର | Odisha Special | Kora Achar




Ingredients:-
1. Jaggery (Gudh) 450gm
2. Salt, Turmeric.
3. Fenugreek (methi), Carom Seeds (ajwain), Fennel (sounph), Red Chili (lal mirch),

Procedure:-
1. Take 450gm raw mango, wash properly.
2. Cut the tip and peel it properly.


3. Now grate the peeled mango and spread it over a plate.


4. Sprinkle Salt (1.5 tsp) and Turmeric (1 tsp) over the spread mango.


5. Now keep it under the sun for about 4-5 hours or until it loses all moisture.





6. In a pan, add Fenugreek (methi 1 tsp), carom seeds (ajwain 2 tsp), fennel (sounph 2 tsp), Red Chili (10pcs), roast them properly and grind it nice.


7. In a pan, add water (1/2 glass), add jiggery (450gms) by crushing it.
8. Wait for the jiggery to melt.


9. All Water (1 glass) more.
10. Now add dried mango pump in it.


11. Cook properly until the water gets dried completely.


12. After the water is no more, add grinded spices (2.5 tsp)


13. Cook for 1 min more.
14. Hurray! Your delicious mango sweet kora pickle (Odisha special) is ready. Serve with rice or chapatti or even alone to your loved ones.
