Hyderabadi Chicken Dum Biryani Recipe (PDF format):- Click Here Ingredients:- 1. Basmati Rice (1 kg), Chicken 2. Salt , Bay Leaves, Small Cardamom 3. Big Cardamom, Clove, Mace (Javitri), Nutmeg (Jaiphal), Black Pepper, Cinnamom. 4. Soybean Oil, Onion. 5. Red Chili, Kashmiri Mirch/ Color Powder. 6. Ginger & Garlic 7. Kevda Water, lemon. 8. Biryani Masala 9. Coriander Leaves. Procedure:- 1. In a 5kg Gamla, take half water. Add Soybean Oil (4 tsp) 2. Add Salt (2 tsp), Bay Leaves (2-3 leaves), and Small Cardamom (4 pc). 3. Cover the lid, and boil it. 4. Here I have taken India Gate Basmati Rice (1 kg), Wash it properly & keep it dipped for 10 min. 5. When the Gamla Water starts boiling, Add Rice into it, Add Salt (1 tsp), Mix it. 6. Cover the lid & Boil it 80%. 7. Now drain water from Rice. 8. Take in Garam Masala a) Small Cardamom b) Big Cardamom c) Clove d) Mace / Javitri e) Nutmeg / Jaiphal f) Black Pepper g) Cinnamom 9. Add all the above garam masala into a bowl and soak it into water for 10 min. 10. Then after grind it. 11. Now, in a pan Add Soybean Oil (1 bowl), Add Onion into it and fry till golden brown. 12. Now in another pan, put Soybean oil (3-4 tsp), add an Onion, fry and add Chicken into it. 13. Cook chicken till the water gets dry. 14. Add a salt (1 tsp) over the frying chicken. 15. Cover the lid and let the chicken release all its water. 16. When the onion in the first pan get golden brown, add ginger & garlic paste onto it. 17. Add Garam Masala (4 tsp) that we have grinded earlier. 18. Add Red Chili (2 tsp), Shimla Mirch/ Color Mirch (1 tsp). 19. Mix & add little little water on it while cooking. 20. Add Kevda Water (2 tsp) & 1 lemon juice after removing the seeds. 21. Add Salt (1 tsp) & mix and cook properly. 22. When spice is cooked properly, add Curd (400gm). 23. Cook till you get a proper paste. 24. Now when the chicken is fried, add the fried chicken into the spice pan. 25. Mix, Cover the lid and cook properly till the gravy is dry. Layering:- 1. In 5Kg Gamla, Add little oil and greese properly. 2. Take a plate and also greese it with oil properly. 3. Now put the plate upside down in the gamla. 4. Now put rice layer then Chicken (in total 2 layer of chicken and 3 layer of rice). 5. Poke a spoon on the layer to make holes. 6. Put Leftover oil over the layer. 7. Take 2 color solution mixed with milk & add in the hole and over the layer. (Here I have taken yellow and orange color). 8. Sprinkle Coriander & Biryani Masala. 9. Cover the lid with a nice cloth. Then put a lid over it & cover it properly. 10. Now in medium flame, Cook it for 10 – 15 minutes. 11. Chicken Dum Biryani is ready! Serve to your loved ones. Enjoy!
